Dairy-Free and Egg-Free Waffles- An Allergy Friendly Recipe

Saturday's in the Adams House has always been Family Breakfast Saturday. It's a time for us all to gather for breakfast and eat together.Some of our family favorites are Biscuits and Gravy, with Bacon and Scrambled Eggs. Another favorite is Pancakes. About a 4 years ago, food life as we knew it was about to change. One of our Littles was diagnosed with food allergies. She is allergic to Peanuts, Eggs, Rice, Almonds, and Walnuts. Then about 2 years ago, another Little began showing signs of a dairy allergy. This made Family Breakfast Saturdays quite challenging. 

Like most Allergy Mama's, I had to figure out a way to still include our Littles without exposing them to their harmful allergens. I began to scour the internet for options. I learned everything I could about substituting different ingredients so that my Littles could still have family favorites that were safe for them. Pinterest became my best friend. I would try recipes out that I had found, many times combining two recipes or tweaking them to get desired results. I found it easy to give one kid Scrambled Eggs, Biscuits and Bacon, without the gravy; and the other one could have the Biscuits and Gravy with Bacon, and no Eggs. Then I found an awesome Pancake recipe that my kids loved substituting Applesauce and Soy Milk for the Eggs and Regular Milk. 

But there was one breakfast item my Littles often asked for that I didn't have. WAFFLES!! Well, I had Eggo Waffles in my freezer, which is how they knew about waffles in the first place. But, they contain egg and dairy, so definitely a no-no. Until tonight! Mama bought a waffle iron. And then I set out, to search the internet for waffle recipes, to compare them with the pancake recipes that I had found. I wanted to make sure which ingredients they each used that were the same, and which ones were different. And then I went to work, building a new recipe to use for safe Waffles for my Littles. 

Here is the result of our Dairy Free and Egg Free Waffles. My Littles squealed in delight when they saw their safe Waffles. This makes my Heart happy because it's such a joy to see them getting to eat like everyone else. Feel free to give them a try. 

Dairy-Free and Egg-Free Waffles

Ingredients:

2 1/2 Cups   All Purpose Flour

4tsp            Baking Powder

4TBSP         Granulated Sugar

1/4tsp         Salt

2 1/2 Cups  Soy Milk

5TBSP         Vegetable Oil

1tsp            Vanilla Extract


Optional Add Ins:

Blueberries

Dairy Free Chocolate Chips

Directions:

Mix all dry ingredients together in a big bowl. Next, add the Soy Milk, Oil, and Vanilla. Whisk together, all ingredients until mixed well. Heat Waffle Iron, spray with a non-stick spray. Fill each square with batter. Cook for about 8min, or until done. Serve with fruit, butter, syrup on top. Makes about 16 waffle squares.
